We all know that the perfect cocktail truly completes your summer afternoon.  And this summer there’s no shortage of delicious cocktail ideas.  Here are three of our favorites – yes, we had to test them out!

Watermelon-Tequila Cocktail

  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 8 cups diced seedless watermelon (1 pound)
  • 1/4 cup fresh lime juice
  • 1 3/4 cups blueberries
  • 3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
  • 1 1/4 cups silver tequila
  • Ice

In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about 1 minute; let the sugar syrup cool. In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp. In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about 2 hours. Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

In the mood for something spicy?

 Jalapeño Margarita

  • Fresh Lime Juice
  • Tequila
  • Sliced  Jalapeño
  • Simple Syrup or Agave Syrup
  • Salt (Optional)

If you like salt, rub a lime wedge around the rim of the glass and dip the glass into the salt.  Depending on you tolerance for heat add 3-8 slices of jalapeños, remembering that the slices at the tip will be milder than the slices up by the seeds.  If you like it hot then add the slices with seeds.  Muddle it at the bottom of the jar with a spoon or muddler and add a squeeze of Agave or simple syrup to taste.  Fill the glass with ice and then add 2/3 fresh lime juice and 1/3 tequila.  Enjoy responsibly it is a spicy, strong cocktail.

Or how about something bitter?

Descanso Beach Smash

  • 1/4 ounce Simple Syrup
  • 3/4 ounce Aperol (bitter orange Italian aperitif)
  • 5 mint leaves, plus 1 mint sprig for garnish
  • 2 ounces rye whiskey
  • 3 small orange wedges skewered on a pick, for garnish
  • Ice

In a cocktail shaker, muddle the lemon wedges and mint leaves. Add ice and the whiskey, Aperol and Simple Syrup and shake well. Pour through a fine strainer into a double rocks glass or wineglass filled with ice cubes or crushed ice. Garnish with the mint sprig and skewered orange wedges.
